Summer has finally arrived and, boy, can we feel it! With temperatures like this, you can feel stuck for ideas when you don’t want to be in a hot kitchen. Luckily, there are plenty of simple yet tasty recipes to feed the family when you’re too hot to stand over a stove.
Pasta salad
Ok, so yes, this one requires some pasta to be boiled. And that means a hot, bubbling pan in your already hot kitchen. But the rest of the ingredients are straight from the fridge. In fact, you can chop anything you fancy up and just chuck it in. Peppers, cucumber, cherry tomatoes, avocado. Throw in some butter beans for some added protein. Crumble in some feta cheese. A drizzle of olive oil and some balsamic vinegar and it’s done!
Couscous salad
Prepare the couscous according to packet instructions. Chargrill some chunky courgette, yellow pepper and shallots and season with some paprika or Moroccan seasoning. Toss the veggies in with couscous and you have a tasty middle eastern salad. You can add sultanas to make it sweeter, and chickpeas for added protein.
Watermelon salad
If you’re after something sweet and fruity, this watermelon salad is full of flavour. Place some chunks of watermelon in a bowl, making sure there are no seeds left inside. Add some chopped red onion or keep them as rings, depending on preference. Crumble in some blue cheese and sprinkle with almonds. Drizzle with olive oil and balsamic vinegar. Enjoy!
Tomato salad
Simple but tasty, and healthy too. The more variety of tomatoes you choose, the prettier your salad will be. Go for heirloom and cherry tomatoes in different colours. Chop them up and mix them with fresh baby spinach and some sliced red onion. For a tasty dressing, mix up some olive oil with balsamic vinegar, a little dried basil, oregano, rosemary and thyme. Drizzle over the top making sure all the tomatoes are covered.
